Homemade crackers with Garden Tales bergamot Marmalade

Ingredients:
300g flour for all uses
60g whole wheat flour
2 tablespoon fresh chopped thyme or other herb of your choice
1/2 teaspoon freshly ground black pepper
2 teaspoons of sugar
2 teaspoons sea salt
4 tablespoon of olive oil
235 ml of water

Let’s get started!


Preheat the oven to 180ºC

Mix the flours, chopped herb, pepper, salt, and sugar in a food processor,
pulsing to combine thoroughly.

Add the olive oil, then slowly drizzle in the water while processing until the dough starts to stick together.

Gently form dough into a ball and cut in half. Let both halves rest for about 10 minutes.
 
Lightly flour a work surface and roll out one-half of the dough until it becomes thin.
 
Cut into squares or rectangles with a sharp knife, pizza cutter, or biscuit cutter.
 
Lay crackers out on a parchment-lined baking sheet. It’s okay to crowd them. Make a small hole with a fork to keep from puffing up.
 
Bake for 12-15 minutes, or until crackers become brown. Transfer the crackers
to a wire rack and leave them to cool.

Repeat with the remaining half of the dough.

Serve with ricotta cheese and Garden tales bergamot Marmalade.
