Ingredients:

1 cup of dates
3 tbsp of olive oil
1 cup of boiling water
1/2 cup brown sugar
1 egg
1 + 1/2 cup self-raising flour
1 tsp of baking powder
½ tsp sea salt
½ cup chopped walnuts

Let’s get started!

Preheat the oven to 180ºC. Grease and line a baking tray with parchment paper.

Finely chop the dates, place them in a medium bowl, pour the boiling water over them and leave them for about 30 minutes.

In a large bowl or mixer, beat the brown sugar and egg until well combined, then slowly add the olive oil.

In a separate bowl, lightly mix the flour, baking powder and salt together.

Add the flour mixture to the sugar mixture, alternating with the dates (after discarding the water).

Add and mix in the chopped walnuts.

Pour the mixture into a bread pan.

Bake in the preheated oven for about 40 minutes or until a toothpick comes out clean.

Serve with your choice of cheese and Garden Tales mulberry jam.
