Ice cream mess with blackberry jam and biscuits

Is there anything more delicious than homemade ice cream with blackberry jam? This creamy recipe makes the perfect treat when paired with the crunch of your favorite biscuits!

Ingredients:

750ml single (pouring) cream
280g natural greek-style yogurt
150g icing sugar – sifted
1 teaspoon powdered vanilla beans
1 jar of blackberry jam
biscuits


Let’s get started!

Place the cream, yoghurt, icing sugar and vanilla in a large bowl or jug and whisk until the sugar is dissolved.

Pour the mixture into a 20 x 30cm tin or in a size that fits the freezer and freeze for 2,5 hours or until firm and just frozen.

Remove from the freezer and, using a butter knife, break up the mixture into small pieces. Place the mixture in a food processor and process for 2-3 minutes or until just smooth.

Spoon into a 2-litre-capacity loaf tin. Spoon over half the blackberry jam and swirl through, using a knife. Repeat with the remaining ice-cream mixture and blackberry jam.

Freeze for 2 hours or until firm.

Scoop into bowls or serving glasses, decorate with fresh blackberries and crumbled biscuits.
