Fig, Bacon and Gorgonzola Tart

This delicious Gorgonzola & Garden tales fig jam tart is not only striking in appearance but also comes together super quickly, especially if you decide to use frozen pastry. Just imagine serving this gorgeous tart up at your next get-together!

Ingredients:

(serves 6 slices)
1 fresh round shortcrust pastry
8 slices of bacon, sliced
1 red onion, sliced
3 eggs
200 ml single cream
75 gr gorgonzola cheese
5 figs sliced in halves
2 tbsp Garden Tales fig jam
Salt and pepper to taste
Arugula to serve

Let’s get started!

Preheat the oven to 200˚C. Roll the pastry out and put it over a 23cm loose-based tart tin.

Remove the excess of pastry with a knife, and prick the pastry all over with a fork.

Chill for 30 minutes, then line the pastry with baking parchment and fill with baking beans. Put on a baking tray and bake for 10-12 minutes.

Remove the paper and beans and bake for a further 7-9 minutes, until light golden all over. Meanwhile, put the bacon and onion in a frying pan over a medium heat.

Fry for 12-15 minutes, until the bacon is crisp and the onion has softened and slightly caramelized. Spoon this mixture into the pastry case and spread the fig jam as well.

In a large bowl, whisk together the eggs and cream. Season with salt and black pepper, then pour over the bacon and onion mixture and evenly scatter over the gorgonzola.

Place the fig halves over the top of the tart. Bake for 30 minutes, until just set and golden.

Leave to cool a bit before serving, and add some arugula on top.
