Crumble cake with Garden Tales Plum Jam

2 cups of wheat flour
2 spoons of baking powder
1 cup of fine sugar
1 tablespoon of vanilla sugar
50 g of melted butter (or oil)
1 cup of plain yogurt
4-5 plums cut into pieces
1 jar plum jam
icing sugar for dusting
For the crumble
100 g of flour
70 g of butter
3 tablespoons of sugar
Let’s get started!
*All the ingredients, yogurt, butter and eggs should be at room temperature.
Preheat the oven to 180 degrees C. Line the base of a 24 cm spring form cake tin by putting a piece of parchment paper on top of the tin base and then clipping the side on so the paper is trapped and any excess sticks out of the bottom.
Prepare the crumble: pour the flour into a bowl, add the finely chopped butter and sugar and rub the ingredients with your fingers until a fine crumble is formed.
Then combine the ingredients with a damp hand to form a smooth dough ball, and put it in the freezer.
Sift the flour into a bowl together with the baking powder and mix. In the second bowl, beat the eggs, sugar, and vanilla sugar until fluffy (about 7 minutes).
Add yogurt, melted butter, and flour with baking powder. Mix briefly at the low speed of the mixer, only until the ingredients combine into a homogeneous mass, then place in a spring-form pan.
Sprinkle the plums on the top and slightly press them in. Spread the plum jam and sprinkle the crumble (the dough from the freezer, crushed in your hands )
Put into the preheated oven and bake for about 45 – 50 minutes, until the dough rises and the top is golden brown.
Remove from oven and cool. Sprinkle with icing sugar.
